The mouthfeel is sublime – thick and coating the tongue beautifully. Rich and beefy – full on umami. Joyful.
The fermentation is so obvious and so delicious. Not too salty either – which is a relief – sweet and balanced. The viscosity of the texture is quite fabulous. We loved it! An absolute stunner!
Great fermented complex nose with plenty going o. A relatively pale brown colour. Sweet on the palate, into stone fruit depth and a little sherry-like acidity,and then salted caramel, slightly overcooked and a smooth lush texture, leaving honey and an earthiness on the palate. Very lovely.
What a stunning, rounded, deep and rich, molasses soy flavour note is delivered on the palate. The flavours are of of caramelised molasses and black beans. It’s meaty, salty and full bodied. We love it.
A most appealing deep red colour and a deep, rich aroma
– if umami had a scent, this would surely be it; we are at least inferring its presence.
The impact on the palate is immediate and intense, with salinity, sweetness, nutty richness and zesty but gentle fermented acidity in great balance.
There is something almost vinous, sherried about this and the length on the palate is extraordinary and nicely nuanced. Never mind the pork belly, we just enjoy sipping it．

In order to reduce the rice cultivation area and improve Taiwan’s self-sufficiency in food, the Council of Agriculture has launched a plan to promote the expansion of acreage of miscellaneous crops. Mr. Zhou, who serves the Kaohsiung District Agricultural Research and Extension Station and is known as “Mr. Edamame,” helped the farmers on the Hengchun successfully restore Taiwan endemic species black bean from the ecological restoration. However, he encountered difficulty in market sales.
LuLu, who happened to know Mr. Zhou, tried the small black beans fried and brewed with hot water under his recommendation. The moment she drank it, she felt an unprecedented sweetness and bean fragrance, which completely changed her perception of Taiwanese beans. “It’s so delicious! The delicate and sweet taste is different from the unique flavor of imported beans. It must be perfect for soy sauce.” Born in a brewing family and familiar with the taste of soybeans, Lulu still has a great sense of surprise when she recalls the encounter with the Taiwan small black beans.
Because of this “drinking” surprise, Lulu immediately decided to purchase a dozen cities of small black beans, not only solving the sales difficulties of the farmers that year but also opening the opportunity for DoYouBo to fully adopt the brewing of soy sauce with 100% Taiwanese-grown soybeans and wheat. She even turned to agriculture cooperation and promoted the revival of Taiwan’s miscellaneous agriculture.
One bean, whole bean
Unlike other soy sauce companies who mostly use “defatted soy flakes” in the brewing process, which involves using a chemical solvent to extract soybean oil to become the raw material for soybean oil, and the residue being soybean meal, DoYouBo is one of the few brands in Taiwan whose full range of soy sauce and seasoning products are brewed using “whole Taiwanese soybeans”.
Lulu says, “The reason DoYouBo continues to use whole soybeans, despite the higher cost, is not just because it is a traditional process, but also because we believe that the taste and flavor of the brewed soy sauce is better this way.”

This is the reply we often hear every time we send soy sauce to farmers. The first person we want to share the most is hard work The farmers who cultivated the best quality Taiwanese soybeans and wheat for us.
In the early days, in order to persuade farmers to contract with soybean oil burgers for planting and production, they were mistaken for liars. Every time they squatted in the soybean fields and communicated with farmers throughout the year, it became the best scenery of this cooperation. Doyoubo can become a high-quality brewing brand recognized by consumers all the way is the support and trust given by farmers.
Douyoubo is the only food brand in Taiwan that all soy sauce series products fully use Taiwan’s soybeans with full raw beans.
In addition to the stable climate and clean water in Pingtung, Zhutian has become an important high-quality brewing place in southern Taiwan. DoYoubo realizes that the preservation of raw materials is another necessary investment.
After the harvested soybeans are transported to Zhutian in Pingtung, proper and safe storage space must be given to avoid the aflatoxin in soybeans during the storage.
Taiwan’s soy sauce brewing technology is greatly influenced by Japan. Even in Japan, the market share of soy sauce brewed from whole beans is only 2.4% (Source: Soy Sauce Book/Shimao Publishing). The 50th anniversary of Douyoubo is launched with contract farming and Taiwan endemic species brown soybeans planted in the Meinong area of Kaohsiung as single bean raw materials. The soy sauce with a light taste, mellow aftertaste, and unique flavor.
From 2018 to 2021, Taiwan’s edamame will have an average annual export value of 80 million U.S. dollars. “Cha Dou” or Brown Soybean, is one of Taiwan’s edamame varieties. It is famous for having a light taro aroma after steaming. It has been gradually used in various food processing in recent years.
The contract farming Brown Soybean used by Douyoubo are located in Meinong, Kaohsiung. The appearance of the Brown Soybean is brown, and the particles are smaller than traditional soybeans, but they are still rich in soybean elements. During the brewing process, due to the pressing and filtering process, the excess oil of the tea beans is removed. With the perfect ratio of soybeans and wheat, it presents a highly refreshing and light taste bud experience.
On August 1st, DoYouBo Chun Yuan Naturally Brewed Soy Sauce/Black Bean won the Great Taste 3 Star award. We also got the 2 star award for the other two product.
Only about 200 products have this honor, and we are the only soy sauce product that won the 3-star award.
